New troubles, due to climatic changes, emerging during the elaboration of wines from dried grapes

During last years we are experiencing a sensible climatic change; this facts condition deeply not only the vine physiological cycle, but the characteristics of the grapes used in the withering process, to produce red wines such as Recioto and Amarone della Valpolicella and white wines like Recioto di Soave and Gambellara, made in Verona region (I). Raising of temperatures, and the difference on the quantity and distribution of rains take to a earlier ripening and marked distinction between technological and physiological ripening.
