This PhD project is focused on the exploration of wine-related bioresources isolated during grape harvests between 2015 and 2020 and preserved either in the VUCC-DBT (Verona University Culture Collection – dept. Biotechnology) or in the culture collection of the Microbiology Laboratory. Special attention was focused on Metschnikowia pulcherrima, a non-fermentative wine-related yeast with versatile capabilities for various biotechnological applications. Specifically, the research explored potentialities for application both within the wine industry and in other supply chains. The information obtained will contribute to expanding the VUCC-DBT catalog with well-characterized wine-related bioresources belonging to the M. pulcherrima species for specific biotechnological applications.
