The PhD project focuses on the exploration of wine-related microbial bioresources stored in VUCC-DBT (Verona University Culture Collection – dept. Biotechnology) and/or preserved in the strain collection of the Microbiology Laboratory belonging to 17 genera and isolated during vintages between 2015 and 2020. Specifically, the research aims at accurately identifying yeasts and bacteria and at characterizing them for possible valorization in the same production chain (wine) or other ones, considering also safety aspects. The information obtained will contribute to expand the catalogue of VUCC-DBT with well characterized wine-related bioresources as well to re-define specific screening protocols for selected biotechnological applications.
