The quality of the musts used as a basis for sparkling wines is strongly tied to vine variety and environmental condition. However, the effect of genetic and environmental factors on the composition of the acidic fraction of the must which is most important for such wines is not yet well known. In the three year research in Trentino, Franciacorta, piacentino and Oltrepo Pavese, on Chardonnay, Pinot nero and Pinot bianco, variety affected more strongly malic acid than tartaric acid content in must. Acids were however deeply influenced both by cultivation area and season.
