Results are presented dealing with the monitoring of enzymatic activities within a vegeteble waste mixture undergoing biological stabilization through composting in two separated trials. Analyses were carried out on lipase (C10), acid and alkaline phosphatases, cellulase, beta-glucosidase, N-acetyl-beta-D-glucoaminidase, and protease. A statistical profile was elaborated to evaluate the consistency of such a profile with predetermined classes of enzymes during the process.
