The aim of this chapter is to provide an up‐to‐date brief review of the composting process and compost production; the chemical, spectroscopic, thermal, biological, biochemical, enzymatic, and microbial analytical parameters and criteria commonly used to evaluate the stability and maturity of organic matter (OM) in composts; the legal aspects involved in compost production and marketing; its most common agricultural uses; and its action as carbon sink when incorporated into the soil.
