Role of biogenic amines as index of freshness in beef meat packed with different biopolymeric materials Wine plays a very important role in the economy of several countries and among these Italy is one of the most renowned producers. Due to the increasing interest of consumers in the “origin” of the food items, also in the case of wine is of the utmost importance to stress its authenticity in relation to the geographical origin. Wine is a very complex matrix and among the various components that contribute to its specific characteristics are macro-, micro-elements and lanthanides, whose concentrations may be quite variable. Through the quantification of trace elements and lanthanides, is possible to identify the different wines according to the origin, because the presence and levels of these elements is strictly related to the chemical and physical characteristics of the soils, even if also cultivation practices, winemaking technology and atmospheric pollution may play a significant role. In this research 120 red wines produced in three Southern Italian regions (Basilicata, Calabria and Campania) in the years 2000-2001-2002, and commercially classified as DOC or IGT, were characterized according to their content in macro-, micro- elements and lanthanides, for a total of 61 analytes.
